Makes 25 portions (Amuse Bouche) Ingredients: 3 1/2 ounces blue cheese1 1/2 cups all-purpose flour, sifted1 tablespoon Sabatino Truffle Zest2/3 cup unsalted butter, cold 3 tablespoons finely chopped fresh sage2 ounces pecans, shelled and chopped, toasted3 1/2 ounces soft spreadable goat cheese, whippedSabatino Truffle Sea Salt, to tasteFresh herbs for garnish, optional Directions: Blend blue cheese, flour, Truffle Zest, butter and sage in a food processor until a sticky dough forms. Serves 8-10   Ingredients 1 baguette, sliced into 20 ½” bias cut slicesExtra-virgin olive oil2 cups whole milk ricotta, drainedSalt and pepperSabatino Truffle Honey2 lemons, grated zest Fresh Truffles, optional Directions Preheat oven to 350°F degrees. Arrange the sliced baguettes in a single layer onto a baking sheet. Lightly brush the slices with olive oil. Bake until golden brown, about 15 minutes. Divide ricotta among crostini.
